Today we were slicing beef heart to try a jerky recipe we found over at Mark's Daily Apple , it is marinating right now and we'll put it in the dehydrator tomorrow morning. Hubby sauteed some beef heart for me to try too. It was chewy but had great flavor - I could have ate a lot more. Another great option to add to the list!
